Strawberries are one of the first crops to be harvested in the early spring. In many parts of the country such as Florida and Southern California, strawberries are in decent supply by early March. Take advantage of this early crop by making a strawberry mimosa. Sprinkle vanilla sugar over two cups of cut strawberries. Pour strawberries into a blender and add ¼ of a cup of orange juice. Blend and strain the mixture through a piece of cheesecloth. Pour halfway into a flute and add your favorite sparking wine or Champagne.
